Man, I am a happy camper ATM! It just works, including power management (Turbo active!), NVMe storage/boot, etc., all in a G5 case! I still have the Wi-Fi/Bluetooth card to install, along with some cable management, but I just wanted to share the success of a personal project that I have wanted to do for quite awhile. EFI folder available upon request.

Finally figured out how to get Mojave on it. the High Sierra install did not need the FakeSMC kext, but apparently Mojave does, so by placing it in the EFI/Clover/Kexts/Other folder, everything just about went smoothly during the upgrade. I did have to unplug/replug the main monitor as I couldn't see the update progressing. Very happy so far. I am purposely avoiding Catalina and pretty sure Big Sur, as they are so locked down it ruins the fun...
